There are excellent walks on Mallorca, particularly in the hills around Soller. Crete has a number of beautiful walks on the western side of the island, including the famous Samaria gorge. Or maybe Eastern Sardina using Cala Gonone as your base - where there are stunning coastal walks. Corsica probably has the biggest variety of walks, from teh infamous GR21 across the mountains to perhaps my favourite coastal walk, the Sentiers du Douaniers around Cap Corse. Go in Spring or Autumn when the temperatures are a bit lower but there is still enough warmth to enjoy. How can you not mention any of the Mediterranean islands?
